Turmeric Steel Cut Oats Recipe - Vegan Richa (1)

I have never been a fan of oatmeal made with rolled oats. Its just something about the texture and flavor that throws me off. I have tried old fashioned oats in oatmeal usingvarious methods, mixed with various grains and what not, without luck. However, what works for me is oat flour and oats in baking. Lately, I discovered that I really like steel cut oats in terms of texture and flavor. So steel cut oats make my morning porridge or pudding instead of the old fashion oats.

This sunny Steel cut oats porridge is a breeze to put together. With the bright turmeric to brighten up your day, the subtle cinnamon and cardamom, the porridge can easily masquerade as a creamy dessert. Dress up your bowl as you wish. I use some pretty strawberries, currants, chia and pepita seeds. Turmeric is staple in a lot of savory Indian dishes. It is a fabulous spice to add to the diet with all its anti-inflammatory properties.

The oats are toasted in a little oil. They can be dry roasted as well. Then simmered in a water and milk mix until cooked through. Then Turmeric, spicesand sweetener are mixed in for another few minutes of simmer. Served warm or chilled with toppings of choice. Usebroken wheat or buckwheat groats for variation.

Start the day with the best breakfast with these Turmeric Steel Cut Oats aka Steel cut oats in Golden Milk!

The porridge when done might have a bit more liquid than the oats. I like the milky oats as there is a lot more flavor in the milk. Oats will absorb all the liquid as they sit.

Ingredients

  • 1/4 tsp (0.25 tsp) oil
  • 1/2 cup (2.82 oz) steel cut oats use certified gluten-free if needed
  • 1 1/2 cups (13.23 oz) water 2 cups for thinner consistency
  • 1 cup (8.61 oz) non dairy milk
  • 1/3 tsp (0.33 tsp) or more turmeric
  • 1/3-1/2 tsp (0.33 tsp) cinnamon
  • 1/4 tsp (0.25 tsp) or more cardamom
  • 1/8 tsp (0.13 tsp) salt
  • 2 tbsp or more maple or other sweetener of choice.

Instructions

  • Heat oil in a saucepan over medium heat. Add the oats and toast for 2 minutes or until fragrant.

  • Add in the water and milk and mix. Bring to a boil. (about 5 mins)

  • Reduce heat to medium low. Stir and continue to cook for 10 mins.

  • Mix in the spices, salt and maple and cook for another 7 minutes or longer until the oats are cooked to preference. Taste and adjust sweet and flavors. The oats will need a few minutes longer if you double/increase the recipe.

  • There might be some extra liquid in the saucepan. The liquid keeps getting absorbed by the oats as the porridge sits. Cook for a few minutes longer or let it cool for 10-15 minutes to thicken.

  • Garnish with sliced strawberries, chia seeds, pepita seeds, currants or other fresh or dried fruit of choice. Serve warm or chilled.

Notes

Make it Oil-free: Toast the oats in a dry skillet until they change color and get fragrant. Add water + milk and proceed.

Variations: Use spice blends like Chai masala + turmeric, or saffron + turmeric, or vanilla or pumpkin pie spice.

I like whole oat groats. You can also use them as a grain replacement for rice in salads and stews as well.

I made these in the instant pot, and they turned out great! The extra water is not too much; the oats do absorb it. Loved it with a few currants stirred in. Thanks!

I don’t like cooked porridge. Just too smooth somehow. But I do like overnight oats in the refrigerator. But I do not like steel cut oats that way – too gritty. But I will be trying your spices from this recipe in a bowl of overnight oats. Thank you.

This looks great! Could grated fresh turmeric be used? If so, would the measurement be the same? Or would the grated pieces not dissolve/make the texture weird? Thanks!!

    • Richa

It depends. If you have used grated ginger in soups or porridge before, then turmeric should be similar. Use smaller grate. With the cooking time the fresh turmeric should become soft enough to not be noticeable.

You can also use cracked wheat (dalia) to make this. It is similarly nutritious. Or if oyu use regular rolled oats, use less liquid and cook for 5 to 10 mins.

Hi Richa, I just made this for tomorrow’s breakfast (because I don’t have time in the morning to cook the oats) and I am going to have trouble waiting that long! Divine spicy smell filled the kitchen….i did add a bit of allspice too, and some raisins. No sweetener added yet tho i might top with some maple when i eat tomorrow. (Tomorrow! NOT today!)
Thanks for your lovely blog! 😉

FAQs

What happens if I eat steel-cut oats every morning? ›

Oatmeal's high fiber content and prebiotic qualities may benefit your body in more ways than one. Making oatmeal a regular part of your menu can potentially lower your disease risk, help your gut health thrive, make bowel movements easier and keep you feeling fuller for longer.

Do you add milk or water to steel-cut oats? ›

For every 1 cup of steel cut oats, you'll need 3 1/2 to 4 cups of liquid, depending upon how thick you'd like them to be (less liquid = thicker steel cut oatmeal). I like to do a mix of water and milk to make the steel cut oats extra creamy. The ratio is flexible. I generally use 2 1/2 cups of water and 1 cup of milk.

Why are steel-cut oats better than oatmeal? ›

Due to their density, steel-cut oats are cooked with a higher ratio of liquid than rolled oats. They yield a larger portion, meaning you can eat less oats and consume fewer calories. Steel-cut oats take longer to digest, helping you to stay full longer and causing less of a rise in blood sugar.

Why not steel-cut oats for overnight oats? ›

We love the chewy, hearty texture of steel-cut oats, but they're too firm to use for overnight oats. Steel-cut are much better simmered slowly, although if you are short on time, soaking them in water overnight then draining them before simmering will drastically cut down the cooking time.

Why does Dr Gundry say not to eat oatmeal? ›

Did you know that oats in oatmeal are packed with lectins which poke holes in your gut lining and can lead to health issues in the future, according to Dr. Gundry. One great way to avoid this is by using sorghum in your breakfast bowl rather than oats.

What are the side effects of steel-cut oats? ›

Oats can cause gas and bloating. To minimize side effects, start with a low dose and increase slowly to the desired amount. Your body will get used to oat bran and the side effects will likely go away.

What happens if you don't soak steel cut oats? ›

Soaking not only softens the oats, but it also makes them more tender, quicker to cook, and easier to digest. In a side-by-side comparison, we found that unsoaked oats lacked that fluffy, creamy texture soaked oats provide.

Should I rinse my steel cut oats before I cook them? ›

It's not necessary to wash oats before cooking, as they are typically processed and cleaned during production. If you're using steel-cut oats, rinsing is a personal preference, but for rolled or instant oats, it's generally not required.

What makes steel cut oats better? ›

Steel cut oats are particularly great because they are only very minimally processed. To get steel cut oats, the oat kernel (called a groat) is cut into two or three pieces with a sharp blade. They are not steamed and rolled, like old fashioned (regular) oats.

What is another name for steel-cut oats? ›

Steel-cut oats (US), also called pinhead oats, coarse oatmeal (UK), or Irish oatmeal, are groats (the inner kernel with the inedible hull removed) of whole oats which have been chopped into two or three pinhead-sized pieces (hence the names; "steel-cut" comes from the steel blades).
