Baking for hours to get the perfect lasagne? No ways. Indulge in a hearty pasta dish made in next to no time on the stove with this simple take on classic lasagne.
HEAToil in a deep oven-safe frying pan over medium-high heat. Add onion, garlic, mince and origanum and cook for 4 minutes. Set aside.
BRINGa pot of water to the boil and cook the lasagne sheets for 3 minutes. Remove and set aside to drain. Tear half of the pasta sheets into pieces and add to the pan with the onion and mince. Stir in the spinach. Combine pasta sauce and water in a jug and mix into the mince mixture. Top with the remaining pasta sheets and sprinkle over ricotta and cheddar.
BRING pan to the boil over high heat and cook for 2 minutes. Transfer to the oven and grill for 5 minutes, until bubbling. Top with basil leaves and serve.

Let me break it to you: If you want to make a lasagna, three layers just won't cut it! For the perfect lasagna, you need at least 4-5 layers to really enjoy all those mouth-watering flavors. And, here's a pro-tip: make sure to season each layer generously, but not too much. The average lasagna has 8 layers!
Squeeze the spinach—To prevent a watery lasagna, make sure to squeeze the spinach well. Place it in a colander or strainer over the sink and squeeze the spinach with your hands or press down on it with a spatula.
Adding egg to ricotta cheese helps to bind the cheese for lasagna so that it doesn't ooze out of the casserole when you cut it. Basically, the egg helps all the cheesy goodness stay intact. So what happens if you don't put eggs in your lasagna? It'll just be a bit runnier, but omitting the egg won't affect the taste.

Once your pan is completely layered, finish the lasagna with a final layer of noodles and cheese. Think of this as the lasagna's lid. Use the same number of noodles you used in the base layers, and then sprinkle the rest of your cheese on top.
The key to creating the absolute best lasagna is to use a combination of ricotta and cottage cheese. Ricotta brings the rich creaminess while cottage cheese lightens things up and seasons the whole dish. For even more cheese, we recommend also using shredded Mozzarella cheese and Parmesan cheese (or Pecorino Romano).
Eggs help prevent the ricotta from drying out and serve to bind the ricotta so it doesn't become runny. One or more eggs are recommended whether you add the other ingredients mentioned here or not.
A thin sauce runs right off of cooked lasagna noodles, causing all the layers to slide off of each other, as well. A thick sauce, meanwhile, almost acts like a glue that holds the layers together, resulting in a dish that slices into neat squares.
Betony Kitchen says you could make lasagna with as little as two layers for a quick lasagna that doesn't take long to bake. Many, however, would consider this skimping. Most recipes you'll find for lasagna call for a minimum of three layers, which seems to be the universal standard.

Finish off your lasagne either with a layer of tomato-based sauce or with your white sauce – whichever you have left – and then grate over plenty of Parmigiano-Reggiano. A common extra topping is torn mozzarella, which makes a lovely, melted cheesy layer on top.
