An Easy Quinoa Recipe with Stuffed Pepper Flavors

Guys. I’m officially obsessed with one pan meals. I posted that Quinoa Taco Skillet last week and today it’s my unstuffed Stuffed Pepper Casserole! The funny thing is, I use to HATE stuffed peppers growing up. My mom would parboil the peppers and then stuff them with this heavy rice and ground beef mixture and ugh. The texture of the peppers was mushy and just grossed me out.

So guess what? I remade it! And let me tell you, it’s way better than your mommas stuffed pepper recipe and easier!

Can You Freeze Stuffed Pepper Casserole?

Yes. You can freeze this stuffed pepper casserole. I’d recommend cooking it according to the directions, excluding the cheese. Freeze stuffed pepper casserole in an air tight container and store in the freezer for up to 6 months. To serve, thaw in the refrigerator for 24 hours. Then top with cheese and bake in 350 degree F oven for 20 minutes.

For this recipe, I decided to use quinoa instead of rice because I like the nutritional value of the quinoa. Quinoa is packed with protein and fiber. Plus it’s gluten free! It also adds a nice texture to each bite and cooks fast! So all in all, it’s perfect if you’re looking for a quick healthy dinner!

Do you need to soak quinoa before cooking? ›

Do you need to soak quinoa before cooking it? In short, no, you don't need to soak quinoa. However, doing so is said to remove phytic acid, which may make it easier for people to digest quinoa. If you just want to remove the bitter flavor from quinoa, rinse it under cold water for about a minute.

Some people are particularly sensitive to saponins, which is why unrinsed cooked quinoa has a reputation for tasting bitter. However, most quinoa that is sold in packages has been "pre-rinsed," which means the saponins have been removed and rinsing isn't necessary.

Why do my stuffed peppers taste bland? ›

The thing about most stuffed bell pepper recipes is 3that they call for salt in the filling, not for the peppers themselves. Without salt, the peppers are flabby and bland, merely a filling case. With a sprinkle of salt, they transform into a sweet and powerfully savory part of the dish.

How to stop stuffed peppers from being watery? ›

Following the logic of precooking your peppers to safeguard against sogginess, you should also avoid watery ingredients in your stuffing. Let's say your filling calls for tomato sauce. Rather than spooning it directly into your hollowed peppers, reduce it on the stove until it's thick.

Do peppers need to be parboiled before stuffing? ›

ANSWER: Some recipes call for blanching the peppers to soften them slightly; others do not. Green peppers at a local store were stuffed with a raw ground meat mixture and looked as though they were not boiled or blanched. If you bake peppers this way, they will take longer to cook and will hold their shape better.

Do you eat the pepper in stuffed peppers? ›

Back then, I'd eat the filling, made from ground beef, Italian seasoning, tomato sauce, and rice, and push aside the pepper. In hindsight, it's not hard to see why people were surprised when I became a vegetarian. Since then, I've learned that the pepper itself is an integral part of any stuffed peppers recipe.

Why do stuffed peppers take so long to cook? ›

For Uncooked Fillings in Whole Peppers:

It's possible to stuff peppers with a raw filling. If you're stuffing a whole pepper, it takes awhile to cook because the filling needs to reach a safe temperature. Out of all the stuffed peppers, this one takes the longest to cook because of its size.

Why do you boil bell peppers before stuffing? ›

I definitely suggest par-cooking the bell peppers first, just a little bit before stuffing them. Not only does this help to soften the bell peppers, but it also cuts down on your cook time. As the bell peppers are cooking you can make the filling, shaving off about 20 minutes from your total cook time.

Do you have to cook peppers before canning? ›
